Post-Crush Update, 2016

 

Press Schedule…

Looking like our weather concerns will not be an issue for an optimal press schedule. As a result, our 2016 press days will be this Thursday and Friday, October 6th and 7th.
We will wakeup Presszilla at 7:30am. This may change due to fermentation sugar levels, however my plan is to press our zinfandel blend and our Sangiovese on Thursday and our cabernet blend on Friday. At this point, I am very pleased with the robust integrity of our fermentation.

 

Press Protocol…

A press event is usually the most challenging in regard to keeping your clothing clean. Under the best conditions, you will have some red wine stains on your clothing. Under the worst conditions, you will look like you are wearing discounted tie-dye reject clothing. Dress accordingly! Waterproof shoes and gloves are highly recommended. If you experience purple hands, at the end of the day I can help remedy with chemical assistance.

 

FYI:
Workers are welcome to experience one week old wine as it falls out of the press. This always brings smiles of approval.
